Pleurotus ostreatus, the oyster mushroom gains its name from its wide flat cap resembling the shape of an oyster shell. Oyster mushrooms are high in nutrients containing significant levels of zinc, iron, potassium, calcium, phosphorus, vitamin C, folic acid, niacin, and vitamins B-1 and B-2.
They have a delicate, mild flavour with a velvety texture and compliment most dishes.
Lentinula edodes, the shiitake mushroom. The name shiitake is Japanese, meaning ”shii mushroom. (Shii is a Japanese evergreen tree the mushrooms grow on).
After the white button it is the most commanly cultivated mushroom.
